Esterase is allowed to act on a food or beverage containing ethyl carbamate to decompose ethyl carbamate.食品又は飲料中のカルバミン酸エチルを効率的に分解できる、実用性に優れた方法を提供することを課題とする。カルバミン酸エチルを含有する食品又は飲料にエステラーゼを作用させ、カルバミン酸エチルを分解する。
