A process for obtaining an extract rich in proanthocyanidins from fruits or extracts previously purified from fruit rich in proanthocyanidins, in which said fruit is cranberry (Vaccinium macrocarpon), which comprises the following steps: a) treat the crushed fruit or a previously purified extract rich in proanthocyanidins with aqueous ethanol, having an ethanol concentration ranging from 50 to 80% by volume, b) filtering the mixture from step (a), c) concentrating the filtered solution from step (b) under vacuum, d) optionally storing the concentrated product from stage (c), product that was optionally diluted previously with demineralized water, for a time ranging from 5 to 24 hours, e) dilute with demineralized water the stored product from step (c) or the concentrated stored product from (d) in case this dilution with water is not carried out in step (d), f) filtering the mixture from step (e), g) loading the solution into a macroreticular aliphatic crosslinked polymeric resin, h) washing said resin with demineralized water, i) eluting the aliphatic crosslinked polymeric resin macroreticular from step (h) with aqueous ethanol having an ethanol content of from 50 to 80% by volume, j) concentrate the eluted solution from the previous stage under vacuum, k) dry the concentrated product from the stage (j) under vacuum, or spray drying, wherein said step (a) is carried out during times ranging from 10 minutes to 2 hours.
