To produce a [beta]-NMN-containing yeast extract from yeast having eating experience, and to produce a yeast-originated [beta]-NMN composition. It is found that a yeast extract containing [beta]-NMN in an amount of 2.0% (w/w) or more relative to a dried solid content can be produced by subjecting an extract from yeast to a reaction with a crude enzyme prepared from a microorganism belonging to the genus Rhizopus, e.g., Rhizopus oryzae.
