PROBLEM TO BE SOLVED: To obtain an antimicrobial agent having more excellent practicality than that of conventional lactic acid bacterium bacteriocin, to provide a method for efficiently obtaining the antimicrobial agent and to obtain a food using the antimicrobial agent.
SOLUTION: The lactic acid bacterium belongs to Streptococcus bovis capable of producing a fermentation product having antimicrobial property on Listeria monocytogenes stably from pH 2 to pH 11. The antimicrobial agent contains the fermentation product obtained by culturing the lactic acid bacterium. The food contains the fermentation product obtained by culturing the lactic acid bacterium. The method for modifying a food includes a process for adding the fermentation product obtained by culturing the lactic acid bacterium to a food. The method for producing a food includes a process for adding the fermentation product obtained by culturing the lactic acid bacterium to a food.
