The process consists of (a) sorting the olive juice for food suitability; (b) pre-heating by heat exchange to near b.pt. to prevent fermentation; (c) evaporating with a single or multiple effect concentrator; (d) recovering the head vapour from the plant water or water added in pressing, for use as a heat source in the process; (e) removing the conc. residue of soluble solids, water and oil; (f) separating into liquid and solid phases; (g) centrifuging the liquid phase, extracting the oil and recycling the remaining liquid to (b); (h) pressing and/or drying the solid phases to extract remaining oil; and (i) recycling the dry solid to the heat source for the evaporation column in (c).
