PROBLEM TO BE SOLVED: To provide a method that permits efficiently isolating/collecting a yeast that generates no foam, and efficiently producing liquors by using the newly obtained non-foam-generating yeast without generating foam or while reducing/suppressing the generation of foam. SOLUTION: This method for breeding a yeast that generates no foam comprises the steps of transducing MNN4 gene and expressing the gene.
