PURPOSE: Provided is a manufacturing method of fermentation foods using herbs, especially Ligularia fischeri to give anticancer activity and to prevent various diseases. CONSTITUTION: The manufacturing method fermentation foods comprises the steps of: washing and sterilizing a pot; collecting Ligularia fischeri leaves and washing and dewatering them; mixing 35-45 wt.% of Ligularia fischeri leaves, 37-42 wt.% of soybean sauce, 13-17 wt.% of soybean paste and 2-4 wt.% of powdered malt; putting the Ligularia fischeri leaves into the pot and inserting 2-4 wt.% of Zanthoxylum schinifolium fruits between the Ligularia fischeri leaves; sealing the pot and maturing them for 6-10 months for the fermentation; and opening the pot and inserting Zanthoxylum schinifolium fruits thereinto once a month.
