PROBLEM TO BE SOLVED: To provide a method for producing a rice ball enabling enjoyment of external appearance and deliciousness almost equal to those of usual meal, in spite of being swallowing food, free from losing a prescribed form as rice ball even when heat thawing, and automatically producible through use of a machine and an apparatus.SOLUTION: This method for producing the rice ball for swallowing food includes: steaming for a prescribed time, boiled rice which is obtained by continuously heating the mixture of rice absorbing water, water at 250-400 wt.% of the rice absorbing water, and thickening polysaccharides to remove a prescribed amount of water from the mixture and molding the steamed boiled rice in a prescribed form.COPYRIGHT: (C)2010,JPO&INPIT【課題】 嚥下食でありながら、通常の食事とほぼ同等の外観やおいしさを楽しめ、加熱解凍をしても握り飯としての所定形状を失うこと無く、かつ、機械・装置等を利用して自動的に製造可能な握り飯の製造方法を提供することを目的とする。【解決手段】 本発明に係る嚥下食用握り飯の製造方法は、水を吸収させた米と、当該水を吸収させた米の250~400重量%の水と、増粘多糖類との混合物を加熱し続けることによって、当該混合物より所定の水分量を除去して得た米飯を、所定時間蒸らした後、この蒸らした米飯を、所定形状に形成して得ることを特徴とする。【選択図】なし
