Provided herein are ginsenoside compositions comprising at least 10 %(w/w) ofa protopanaxadiol type of ginsenosidesuitable for administration to a subject. Also provided are methods using theginsenoside compositions for reducing acetaldehydeconcentrations, preventing or ameliorating a symptom of elevated acetaldehydeconcentration, or reducing the risk of diseases ordisorders caused by the intake of ethyl alcohol.
