The present invention relates to a green coffee bean extract comprising phenolic compounds in a large quantity having effects of inhibiting tyrosinase activity and melanin formation. In particular, the green coffee bean extract is produced by a method comprising the steps of: a) mixing green coffee beans with water； b) applying focused ultrasound to the mixture obtained in the step a)； c) ultrasonically treating the mixture treated with focused ultrasound in the step b)； d) applying focused ultrasound to the mixture ultrasonically treated in the step c)； and e) ultrasonically treating the mixture treated with focused ultrasound in the step d).
