PROBLEM TO BE SOLVED: To provide a method for producing an extract containing a sphingoid base in a manner in which it can be used as a food material, and a food and drink containing the resultant extract, or a functional food.SOLUTION: A method for producing an extract containing a sphingoid base has the following step (1): in which a sphingoid base-containing material is dissolved or dispersed in 0.001-10 M of acidic ethanol or acidic ethanol aqueous solution, and heated at 30°C to 100°C for 30 minutes to several days for acid hydrolysis. The method further has the following step (2): in which the extract obtained by the step (1) is fractionated by extraction with ion exchange resin, supercritical fluid or diatomaceous earth to obtain a sphingoid base.SELECTED DRAWING: None【課題】食品素材として使用できる方法でのスフィンゴイド塩基を含む抽出物の製造方法、及び得られた抽出物を含む飲食品、または機能性食品を提供する。【解決手段】本発明は、下記（１）の工程を含む、スフィンゴイド塩基を含む抽出物の製造方法を提供する。（１）スフィンゴ脂質含有素材を０．００１～１０Ｍの酸性エタノール又は酸性エタノール水溶液に溶解または分散し、３０℃から１００℃で３０分から数日間加熱して酸加水分解する工程また、本発明は、さらに下記（２）の工程を含むスフィンゴイド塩基を含む抽出物の製造方法を提供する。（２）工程（１）により得られた抽出物からイオン交換樹脂または、および超臨界流体抽出または、および珪藻土を用いた抽出により分画してスフィンゴイド塩基を得る工程。【選択図】なし
