The present invention relates to a method for delaying fruit maturation by the treatment with sound waves in a particular sound range. More specifically, in the fruit of a plant treated with sound waves, the expression of the ethylene biosynthesis gene is inhibited, and thus the maturity of the fruit is delayed. Therefore, the method of the present invention can be utilized in the freshness preservation and long-term storage of agricultural products after harvest.
