A method for preparing a polyglycerin-based food emulsifier, a functional emulsified oil using the food emulsifier, and a method for preparing the functional emulsified oil are provided to improve the elasticity of dry noodles and to enhance the antioxidizing effect of food. A method for preparing a polyglycerin-based food emulsifier comprises the steps of reacting 70 wt% of a rapeseed oil or a soybean oil and 30 wt% of glycerin in the presence of 0.06-0.08 wt% of a sodium hydroxide catalyst to prepare monoglyceride; condensing the monoglyceride to prepare diglyceride; condensing the diglyceride with a fatty acid; and condensing the obtained product with an acid.
