PROBLEM TO BE SOLVED: To provide modified gluten having a good flavor and high viscosity by as simple a method as possible.SOLUTION: Provided is a method for producing modified gluten comprises the steps of: mixing gluten dispersed or dissolved in water and a water-soluble soybean polysaccharide, and adjusting the mixture to a pH of 3 or more and less than 5.5 or to a pH of 10 or more and 12 or less and drying the mixture. Further provided is a method for preparing modified gluten, in which, after the pH adjustment, the mixture is preferably dried after neutralizing the mixture to a pH of 5.6 or more and less than 8.
