PROBLEM TO BE SOLVED: To provide a cooking method of a food made of flour for making roasted cheese Monjayaki, roasted cheese Japanese pancake, and pizza and so on, on a heated flat hot plate.SOLUTION: An example of making Margerita of pizza is indicated: in a step A, a dough is mounted on a hot plate 1, a dough mass 3 is spread for making a pizza crust 4 which is formed into a circular shape, triangular shape or star-shape in a step B, for example, a surface of the dough which is formed into the circular shape is subjected to gelatinization in a step C, a pizza sauce 5 is applied to the pizza crust in a step D, strip-shaped cheese pieces 6 are scattered on whole surface of the pizza, then whole surface is roasted from flame 11 which is output downward from a gas burner 10, for forming a cheese layer 6a by melting the cheese pieces 6 in a step E, ingredients 7 are mounted on the pizza, then whole surface on which the ingredients 7 are mounted and an outer edge 4a of the pizza crust are roasted by flame 11 output downward, in which, instead of basil, other herb may be used. As ingredients, confectionery, seafoods, meat, vegetables and fruits can be used however, when various kinds of ingredients 7 are mounted together, a heating time by the flame 11 is adjusted for every ingredient 7, and when whole surface of the pizza is baked, according to a taste of a user, olive oil is put on the pizza and the pizza is cut into pieces.SELECTED DRAWING: Figure 2COPYRIGHT: (C)2018,JPO&INPIT【課題】加熱された平面鉄板上で炙りチーズもんじゃ焼き、炙りチーズお好み焼き、ピザ等を作る粉ものの調理方法の提供。【解決手段】ピザのマルゲリータの例を示す。A:生地を加熱板1に落とし、生地溜り3を延ばして、円形、三角形、星形などのピザ台4と成す。B:例えば円形状で、生地の表面が糊化させ、C:ピザソース5を塗広げ、D:主に短冊状のチーズ片6を一面に散らし、ガスバーナー10から下方に出る炎11で表面全体を炙り、チーズ片6が全面的に溶かしてチーズ層6aを形成E:次に具材7を乗せ、再び下方に出る炎11でその具材7の乗った表面全体とその外縁4aを炙る。バジルに代わって、他のハーブでもよい。具材には、菓子類や、海鮮類、肉類、その他、野菜や果物等を使えるが、一緒に種々の具材7を乗せる場合は、具材7毎に炎11による加熱時間を調整し、全体の焼き上がり時に、好みに応じてオリーブ油をかけ、切り分ける。【選択図】図2
