The preparation method of the tapioca pearls, provided by the invention, is simple, so that the tapioca pearls are suitable for mass production.本發明為一種澱粉抗老化組合物、粉圓及其製備方法。本發明澱粉抗老化組合物,由親水膠體、乳化劑和麥芽糖澱粉酶組成。本發明粉圓,原料包括木薯澱粉、變性澱粉、食用色素、麥芽糖漿、水和上述的澱粉抗老化組合物。而粉圓的製備方法,含以下步驟:將木薯澱粉、變性澱粉、食用色素、親水膠體和乳化劑混合,獲得混合物;將麥芽糖澱粉酶、麥芽糖漿溶解於水中,獲得酶溶液;將混合物和酶溶液混合,並逕行後續加工,獲得粉圓。並藉由澱粉抗老化組合物的澱粉抗老化特性,達到粉圓長期存儲仍富有彈性、嚼勁十足,且製備方法簡單,適於大量生產。
