The subject of the invention is a method for preparing a plant extract which comprises the steps of: - carrying out an aqueous extraction of said plant in a closed vessel in the presence of an amount of air of at most 25%, controlled temperature, to obtain a juice of said plant - filter the juice, - carry out a microbiological neutralization treatment of said juice to obtain a stabilized plant extract, and - store the extract thus obtained. It is also an object of the invention a stabilized plant extract thus obtained and its use for the preparation of compositions in various applications. L'invention a pour objet un procédé de préparation d'un extrait végétal qui comprend les étapes consistant à : - réaliser une extraction aqueuse dudit végétal dans une cuve fermée en présence d'une quantité d'air d'au plus 25%, à température contrôlée, pour obtenir un jus dudit végétal - filtrer le jus, - réaliser un traitement de neutralisation microbiologique dudit jus pour obtenir un extrait végétal stabilisé, et - stocker l'extrait ainsi obtenu. Est également objet de l'invention un extrait végétal stabilisé ainsi obtenu et son utilisation pour la préparation de compositions dans diverses applications.
