In the present invention, provided is a manufacturing method of ginseng, which preserves effective components to extract ginseng in maximum to lower a cholesterol level in ginseng by using a combination of a fermentation process and a production process of red ginseng to bring an improvement in cholesterol metabolism, which is a cornerstone of preventing cardiovascular diseases.
