The purpose of the present invention is to provide an extruded noodle which can be boiled within a short period of time or has good reconstitution properties and shows a comfortable texture when served. The extruded noodle having a through hole (2), said through hole extending along the longitudinal direction, wherein: the hole (2) is closed or reduced in size in the step of boiling or reconstituting in hot water the noodle; in the cross section of the noodle (1), the hole (2) radially extends outward from the center of the cross section of the noodle (1); and, in the hole, a plurality of grooves (22) are formed rotational symmetrically about the center of the cross section.
