The present invention relates to a method for manufacturing vegetable oil emulsion using ultrasonic treatment, comprising the following steps: mixing water and vegetable oils to provide a first mixture (a)； and applying ultrasonic waves having the frequency of 25 to 70 kHz to the first mixture to solubilize the first mixture (b). According to the manufacturing method of the present invention, various herb oils can be emulsified with high yields in an easy manner by treating the oils with ultrasonic waves having a specific frequency； delamination between oil and water can be prevented for a long period of time； and the method can be widely applied in various herb oils.본 발명은 초음파 처리를 이용한 식물성 오일 에멀젼의 제조방법에 관한 것으로 물과 식물성 오일을 혼합하여 제1혼합물을 제공하는 단계 (a)； 및 상기 제1혼합물에 25 내지 70kHz의 주파수를 갖는 초음파를 인가하여 제1혼합물을 수용화시키는 단계 (b)；를 포함한다. 본 발명에 따른 제조방법은 특정 주파수를 갖는 초음파를 처리함으로써 다양한 허브 오일을 매우 용이하게 고수율로 수용성 에멀젼화시킬 수 있으며, 오일과 물의 층분리를 장기간 획기적으로 방지할 수 있고, 다양한 허브 오일에 범용으로 적용할 수 있는 우수한 장점을 갖는다.
