PROBLEM TO BE SOLVED: To provide a method and an apparatus which are suitable for preparing a lot of soft-boiled eggs and capable of holding the eggs on warm condition for long time without changing an egg condition so as to be consumed at any time.SOLUTION: The method of preparing the soft-boiled eggs includes the steps of immersing one or more eggs in a heart transfer medium, raising the temperature of the heat transfer medium to a first temperature value and thereafter cooling the heat transfer medium at a rate such that the temperature of the heat transfer medium falls to a second temperature value for a predetermined time interval.
