The present invention relates to a spirulina nanoemulsion composition which, more particularly, has enhanced stability, and to a method for preparing the same. The method for preparing a spirulina nanoemulsion composition includes the steps of: (s1) producing a W/O emulsion by mixing an oil phase (a) in which oil and a surfactant are mixed with a water phase (b) in which spirulina and natural polymers are dissolved in water and then homogenizing the oil phase (a) and the water phase (b)； (s2) producing a W/O/W emulsion by adding pectin into the W/O emulsion and then homogenizing the W/O emulsion and pectin； and (s3) nano-emulsifying the W/O/W emulsion. The spirulina nanoemulsion composition according to the present invention has enhanced stability with respect to pH, light, heat and so on and thus can maintain excellent antioxidant activity for a long period of time. Therefore, the spirulina nanoemulsion composition is useful as a material for high-quality food, cosmetics, pharmaceutical products, etc.본 발명은 스피룰리나 나노에멀젼 조성물 및 이의 제조방법에 관한 것으로, 더욱 상세하게는 안전성이 개선된 스피룰리나 나노에멀젼 조성물 및 이의 제조방법에 관한 것이다.상기 스피룰리나 나노에멀젼 조성물의 제조방법은 (s1) (a) 오일과 계면활성제가 혼합된 유상 및 (b) 스피룰리나, 천연 고분자가 물에 용해된 수상을 혼합하고, 균질화시켜 W/O 유화물을 제조하는 단계； (s2) 상기 W/O 유화물에 펙틴을 첨가하고, 균질화시켜 W/O/W 유화물을 제조하는 단계； 및 (s3) 상기 W/O/W 유화물을 나노에멀젼화 시키는 단계를 포함한다.본 발명에 따른 스피룰리나 나노에멀젼 조성물은 pH, 빛, 열 등에 대한 안정성이 개선되어 우수한 항산화능을 장기간 유지할 수 있으므로, 고품질의 식품, 화장품, 의약품 등의 소재로 유용하다.
