The present invention relates to a preparation method of active peptide from by-product after processing Taiwan tilapia through fermentation and culture extraction, which is first evenly chopping the by-product remained after processing Taiwan tilapia; then, sequentially performing hot extraction, freezing and drying to form rough fish extract powder; and, evening mixing the rough fish extract powder, pure water and glucose into a rough fish extract powder and glucose mixture; inoculating partially activated lactic acid bacteria into the rough fish extract powder and glucose mixture; performing a fermentation process; performing a centrifugal process for the obtained rough fish extract powder and glucose mixture; venting and filtering the supernatant after centrifugal process to obtain a mixture; then, laying the mixture flat on a stainless tray and performing the final freezing and drying process by a freezing/drying machine, so as to extract the fermented, frozen and dried powder containing active peptide in high quality and having small molecular weight.本發明係一種由臺灣鯛加工後副產品經發酵及培養萃取出活性胜肽之製法,該製法係先將臺灣鯛加工後所殘留之副產品均勻絞碎後,依序進行熱萃取、冷凍乾燥,以形成魚粗萃粉末,嗣,將該魚粗萃粉末、純水及葡萄糖均勻混合成一魚粗萃粉末葡萄糖混合液,且對該魚粗萃粉末葡萄糖混合液接種已部份活化之乳酸菌,並執行一發酵處理後,對所獲取之魚粗萃粉末葡萄糖混合發酵液執行離心處理,以能將離心過後的上清液進行抽氣過濾處理,之後,平鋪在一不鏽鋼盤上,以凍乾機執行最終的冷凍及乾燥處理,即能萃取出富含高品質且小分子量之活性胜肽的發酵凍乾粉末。
