PURPOSE: An anti-inflammatory composition and a skin whitening composition using a kiwi fruit fermentation are provided to suppress NO, PGE2, and inflammatory cytokine generation, and melanogenesis. CONSTITUTION: An anti-inflammatory composition contains a kiwi fruit fermentation which is prepared by inoculating lactic acid bacteria and yeast to a crushed kiwi fruit and fermenting. Sugar is added to the crushed kiwi fruit as an energy source. The lactic acid bacteria and the yeast are Lactobacillus plantarum and Saccharomyces cerevisiae. The composition is a pharmaceutical composition, a food composition, or a cosmetic composition.본 발명은 참다래 과실 발효물을 이용한 항염증제 조성물 및 피부 미백제 조성물을 개시한다. 구체적으로 참다래 과실 추출물에 비하여 향상된 NO 생성 억제 활성과 PGE2 및 염증성 사이토카인의 생성 억제 활성을 가지고 또한 향상된 멜라닌 생성 억제 활성을 가지는 참다래 과실 발효물을 이용한 항염증제 조성물 및 피부 미백제 조성물을 개시한다.
