In addition to that, there are used means including using sweet sake concentrated by heating so as to reduce the weight to 70% or less, making the confectionery or the confectionery material to candy, caramel, marshmallow, and baked confectionery, and using at least one selected from dairy products, gelatin, vegetables, fruits, nuts and seeds, potatoes and beans. Unique confectionery having unconventional taste can be made by using as the confectionery material, the confectionery or the confectionery material.COPYRIGHT: (C)2020,JPO&INPIT【課題】解決しようとする課題は、みりんは従来脇役として使用されており、みりんを主役とした菓子または菓子材料は全くなかった点である。そこで、みりんが主役の菓子または菓子材料、使用する材料の中で最も使用重量が多い材料がみりんである菓子または菓子用材料、さらには、みりんの重量割合が５０％以上である菓子又は菓子材料を作り、多くの人たちにみりんの魅力を伝えたいと考えた。【解決手段】本発明は、みりんを主役とした菓子または菓子用材料を作成するため、みりんの特徴を生かし、みりんを主成分とした菓子または菓子材料を作成したことを最も主要な特徴とする。加えて、７０％以下まで重量が減るように加熱濃縮したみりんを使用すること、菓子または菓子材料がアメ、キャラメル、マシュマロ、焼き菓子であること、乳製品、ゼラチン、野菜類、果実類、種実類、イモ類、豆類の少なくともいずれか一つを使用することなども上記課題を解決するための手段である。さらに、本発明の菓子又は菓子材料を菓子材料として使用することにより、いままで味わったことがない独特の菓子が作成できた。
