PURPOSE: Rye and soybean paste containing strawberry, and a producing method thereof are provided offer nutrient components of the strawberry to the rye-soybean paste, and to improve the palatability of the rye-soybean paste. CONSTITUTION: A producing method of rye-soybean paste containing strawberry comprises the following steps: washing 25-35kg of strawberry, and boiling the strawberry for 1.5-2.5 hours to obtain a concentrate; preparing 2.5-3.5kg of glutinous rice gruel; mixing the glutinous rice gruel with 7.9kg of fermented rye and soybean powder, 8-12L of starch syrup, 4-6kg of red pepper powder, and 66-78L of water; adding the strawberry concentrate into the mixture; and adding 7-9kg of fermented pepper and bay salt into the mixture before aging the mixture for 20-40 days.본 발명은 통상적인 집장의 제조방법에 있어서, 딸기 농축액을 첨가하여 제조하는 것을 특징으로 하는 딸기 집장의 제조방법 및 상기 방법으로 제조된 딸기 집장에 관한 것이다.
