The present invention relates to transgenic rice producing capsanthin, which is obtained by breeding rice transformed with a plant transformation expression vector containing a capsanthin-capsorubin synthase gene and zeaxanthin-producing rice transformed with a plant transformation expression vector containing a &beta；-carotene hydroxylase gene. The transgenic rice according to the present invention has a high content of zeaxanthin and exhibits red color while producing capsanthin, a red pigment of red pepper, and thus can be used as functional special crops.본 발명은 캡산틴 합성효소(capsanthin-capsorubin synthase) 유전자를 포함하는 식물체 형질전환 발현벡터로 형질전환된 벼와； 베타카로틴 하이드록실레이즈(β-carotene hydroxylase gene) 유전자를 포함하는 식물체 형질전환 발현벡터로 형질전환된 지아산틴 생산 벼를 교배하여 얻은, 캡산틴을 생산하는 형질전환 벼에 관한 것이다. 본 발명에 따른 형질전환 벼는 지아산틴 함량이 높고 고추의 적색소인 캡산틴을 생성하면서 붉은색을 나타내므로, 기능성 특수 작물로 이용될 수 있다.
