The present invention relates to a preservative composition for fruits and vegetables, which contains: an organic acid and/or a salt thereof; and at least one selected from the group consisting of glucosamine, a glucosamine derivative, a chitin oligosaccharide, a chitosan oligosaccharide, and salts thereof. Also, the present invention relates to a preservation liquid for fruits and vegetables, which contains the preservative composition and a liquid medium. Further, the present invention relates to fruits and vegetables which have been treated using the preservation liquid.
