The invention relates to a system for concentrating a liquid product which contains a specified substance, for example sugar, in particular fruit juice, for example apple juice, comprising two evaporating assemblies (22, 52) which are arranged in a row. The first evaporating assembly (22) is designed to concentrate the liquid product to a specified first concentration of the specified substance, and the second evaporating assembly (52) is designed to subsequently concentrate the liquid product to a specified final concentration of the specified substance. At least the first evaporating assembly (22； 122) comprises a plurality of evaporation stages. The system also comprises two heating devices (40, 56), one of which is provided for heating the first evaporating assembly (22, 122) while the other is provided for heating the second evaporating assembly (52), wherein only the first heating device (40) comprises a mechanical vapor compressor (40), and at least one filter and/or clarifying device (34).
