PROBLEM TO BE SOLVED: To provide a manufacturing method of packed rice which can cheaply manufacture packed rice which can be preserved for long-term in ordinary temperature and can be eaten after opening immediately.SOLUTION: Rice is cleansed and immersed in water in appointed time. The immersed rice is drained water off and steamed at not less than 100°C. The steamed rice is crumbled after cooling, the crumbled rice is put in a gas barrier heat proof pack, water or seasoning liquid is added in the heat proof pack, and the heat proof pack is sealed up after the air in the heat proof pack is replaced with inert gas. The rice in the sealed heat proof pack is cooked and sterilized by multistage temperature rising heating, and cooled.COPYRIGHT: (C)2015,JPO&INPIT【課題】常温で長期保存ができかつ開封後即可食できる容器入り米飯を安価に製造できる容器入り米飯の製造方法を提供する。【解決手段】まず、原料米を洗米後、水に所定時間浸漬する。次いで、この浸漬した米を水切りし、100℃以上の蒸気で蒸す。次いで、この蒸した米を冷却後にほぐし、このほぐした米をガスバリアー性のある耐熱容器内に入れ、続いてこの耐熱容器内に水または調味液を加えてから、その耐熱容器内の空気を不活性ガスで置換後、密封する。次いで、この密閉した耐熱容器内の米を多段昇温加熱して炊飯と同時に殺菌をした後、冷却する。【選択図】図1
