Provided is a composition which contains various kinds of foods, has good shape retention properties and excellent adhesiveness, and can be used in various use applications and therefore has various usage properties. A paste containing food microparticles, which contains at least one type of food microparticles selected from seed microparticles, cereal microparticles, bean microparticles, alga microparticles, vegetable microparticles and fruit microparticles and an oil or fat, and meets all of the requirements (1) to (5) and also meets at least one of the requirements (6-1) to (6-3): (1) the content of the food microparticles is 15 to 85% by mass inclusive; (2) the total oil or fat content is 20 to 75% by mass inclusive; (3) when the paste is subjected to an ultrasonic treatment, the mode diameter after the treatment is 0.3 to 200 [mu]m inclusive; (4) the water content is 20 to 80% by mass inclusive; (5) the largest particle diameter is more than 100 [mu]m; (6-1) the contact angle as measured on a clean glass surface that is left to stand horizontally at a measurement temperature of 20 DEG C is 40 to 160 DEG inclusive; (6-2) the sliding angle as measured on a clean glass surface at a measurement temperature of 20 DEG C is 50 DEG or more; and (6-3) the advancing contact angle as measured on a clean glass surface at a measurement temperature of 20 DEG C at an inclination angle of 45 DEG is 50 DEG or more.本發明提供一種組合物,其於含有多種食品之組合物中保型性良好,附著性亦優異,可用於多種用途且具有各種利用特性。本發明之組合物係一種含有食品微粒子之糊料,其係含有選自堅果類、穀物類、豆類、藻類、蔬菜類及果實類中之1種以上之食品微粒子、及油脂之糊料,其滿足(1)至(5)之全部,且滿足(6-1)至(6-3)中之1個以上。(1)食品微粒子之含量為15質量%以上且85質量%以下、(2)總油脂成分比率為20質量%以上且75質量%以下、(3)於進行超音波處理之情形時該處理後之眾數粒徑為0.3 μm以上且200 μm以下、(4)水分之含量為20質量%以上且80質量%以下、(5)最大粒徑大於100 μm、(6-1)於水平靜置之潔淨玻璃面上之測定溫度20℃下之接觸角為40°以上且160°以下、(6-2)於潔淨玻璃面上之測定溫度20℃下之滑落角為50°以上、(6-3)於潔淨玻璃面上之測定溫度20℃、傾斜角45°下之前進接觸角為50°以上。
