PROBLEM TO BE SOLVED: To provide triglyceride easily being solidified or crystallized at a room temperature (20°C) and containing a middle chain fatty acid as a constituent fatty acid, and a method for enhancing solidification property or crystallinity of the triglyceride.SOLUTION: In triglyceride containing a middle chain fatty acid as a constituent fatty acid, percentages of n-octanoic acid, n-decanoic acid and/or n-dodecanoic acid in total amount of the middle chain fatty acid constituting the triglyceride are adjusted in a specific numerical range. For example, n-octanoic acid percentage is 80 to 90 mass%, n-decanoic acid percentage is 6 to 14 mass% and n-dodecanoic acid percentage is 1 to 10 mass% in the total amount of the middle chain fatty acid, or n-octanoic acid percentage is 75 to 90 mass%, n-decanoic acid percentage is 1 to 14 mass% and n-dodecanoic acid percentage is 6 to 14 mass% in the total amount of the middle chain fatty acid.SELECTED DRAWING: Figure 1【課題】本発明の課題は、室温(20℃)において固化又は結晶化しやすい、構成脂肪酸として中鎖脂肪酸を含有するトリグリセリド、及び該トリグリセリドの固化性又は結晶性を向上させる方法を提供することである。【解決手段】構成脂肪酸として中鎖脂肪酸を含有するトリグリセリドにおいて、前記トリグリセリドを構成する中鎖脂肪酸の全量に占める、n-オクタン酸、n-デカン酸及び/又はn-ドデカン酸の割合が特定の数値範囲となるように調整する。例えば、前記中鎖脂肪酸の全量に占める、n-オクタン酸の割合を80~90質量%、n-デカン酸の割合を6~14質量%、n-ドデカン酸の割合を1~10質量%とするか、または、前記中鎖脂肪酸の全量に占める、n-オクタン酸の割合を75~90質量%、n-デカン酸の割合を1~14質量%、n-ドデカン酸の割合を6~14質量%とする。【選択図】図1
