The present invention relates to genetically transformed rice which expresses a gene that is active in vaccination for diarrhoea and to a production method therefor, and more specifically to: a method for producing genetically transformed rice made by using recombinant gene technology to introduce, into the rice, genes derived from Vibro cholerae and Escherichia coli which are the main causative organisms of diarrhoea; genetically transformed rice obtained using the method; a fusion protein which is useful as a vaccine for diarrhoea obtained from the genetically transformed rice; and a method for obtaining the same. By producing genetically transformed rice which expresses a gene that is active in vaccination for diarrhoea and supplying the same to livestock as a vegetable feed, the present invention can give the economic advantage that it markedly reduces the use of antibiotics in the livestock-rearing industry and so lower livestock-rearing costs for farmers. In addition to the economic advantage, this redu
