PURPOSE: A drying method of marsh snails is provided to enable users to distribute dried marsh snails for a long time without the decomposition by rapidly freeze-drying the marsh snails.CONSTITUTION: A drying method of marsh snails comprises the following steps: boiling the marsh snails with shells at 80-110 deg C for 5-20 minutes separating the flesh of the cooked marsh snails from the shells checking the cooked condition, the foreign material presence, or the bacterial infection of the cooked marsh snail flesh separating inedible portions from the marsh snail flesh, and washing and sterilizing the marsh snail flesh freezing the marsh snail flesh in a container for 15-20 hours drying the frozen marsh snail flesh in a vacuum drying tube for 35-42 hours checking the dried condition, the foreign material generation, and the water content of the dried marsh snail flesh and double packaging the dried marsh snail flesh using a plastic sheet with a water absorbing agent.COPYRIGHT KIPO 2012본 발명에서는 다슬기를 끓는 물에 넣고 삶아 익힌 후 껍질로부터 빼낸 다슬기속살을 특정 조건에서 급속 동결건조시킴으로써 변질되지 않은 상태로 장기간 보관 및 유통시킬 수 있도록 하고, 다시 조리할 때 다슬기 속살 고유의 부드러운 육질 및 풍미감이 고스란히 복원될 수 있도록 하여 상품성을 크게 높일 수 있도록 한 새로운 다슬기의 건조방법이 개시된다.본 발명은 먼저 다슬기가 충분히 잠길 만큼의 물을 용기에 넣고 끓인 다음 깨끗하게 세척한 다슬기를 껍질째 끓는 물에 넣고 다시 80~110℃로 끓이면서 5~20분 동안 삶아 익히는 다슬기 증숙(烝熟))단계와 삶아 익힌 다슬기를 건져낸 후 껍질로부터 다슬기속살을 빼내는 속살분리단계와 삶아 익힌 다슬기속살의 익힘 상태, 이물질 함유여부, 세균감염여부 등을 검사하는 검수단계와 상기 검수단계를 거친 다슬기속살중에 포함된 불가식 부분을 제거하고, 세척한 후 소독하는 전처리단계와 상기 전처리단계를 거친 다슬기속살을 용기에 담은 상태에서 영하 30~40℃로 유지되는 급속동결실에 넣어 15~20시간 동안 동결시키는 급속동결단계와 급속동결된 다슬기속살을 진공건조관에 넣고 완전진공상태를 유지하면서 열과 냉을 동시에 공급하면서 35~42시간 동안 승화(昇華)현상에 의한 건조가 이루어지도록 하는 건조단계와 상기 건조단계를 거쳐 건조가 완료된 시점의 다슬기속살 시료를 채취하여 건조상태, 이물질발생여부, 수분 함량 등을 검사하는 건조물 검사단계와 건조된 다슬기속살을 용기로부터 분리한 후 수분의 침투를 방지하기 위하여 수분 흡수제를 넣은 상태에서 이중 비닐포장하는 포장단계를 포함하여 구성된다.
