PROBLEM TO BE SOLVED: To provide a method for forming a food dough piece having a linear pattern by a second food dough on a cut surface of the food dough piece and a device for the same, concerning a method for cutting food dough extruded from an extrusion nozzle part and forming the food dough pieces and a device for the same for the food dough of confectionery such as cookies and paste materials such as kamaboko or boiled fish pastes, etc.SOLUTION: A method for forming a composite food material piece is characterized by: forming a composite food material by supplying first food dough to a flow path formed by an outer cylinder and a center member in the inside of an extrusion nozzle part and supplying second food dough into the inside of the first food dough imparting rotation in a circumferential direction to the composite food material by making the composite food material flow down from an upstream side toward a downstream side and rotating an inner circumferential surface of an outer cylinder forming a portion of the flow path in the circumferential direction and making the second food dough exist helically in the inside of the first food dough, and forming a linear pattern by the second food dough in a cutting cross section of the composite food material extruded from a nozzle opening of the extrusion nozzle part.COPYRIGHT: (C)2015,JPO&INPIT【課題】クッキーなどの菓子やかまぼこなどの練物生地などの食品生地において押出ノズル部から押出された食品生地を切断して食品生地片を成形する方法及びその装置に関し、前記食品生地片の切断面に前記第二食品生地による線状の模様を有する食品生地片を成形する方法及びその装置を提供することを目的とする。【解決手段】押出ノズル部の内部にて外筒と心部材が形成する流路に第一食品生地を供給し、第一食品生地の内部に第二食品生地を供給して複合食品生地となし、該複合食品生地を上流側から下流側に向かって流下させるとともに、前記流路の一部を形成する外筒の内周面を周方向に回転することにより複合食品生地に周方向の回転を付与し第一食品生地の内部に第二食品生地を螺旋状に内在させ、押出ノズル部のノズル口から押し出される複合食品生地の横切断面に第二食品生地による線状の模様を形成する。【選択図】図2
