A process for preparing chicken mince enriched biscuits which comprises selecting broilers reared under same or similar feeding conditions debonin$ the chicken in a known manner. mincing the meat electrically or by any suitable means followed by thoroughly kneading mixing the kneaded meat with predetermined amounts of refined wheat flour, sugar, salt, vegetable ghee or butter, spke mix, baking powder. eggs, permissible colour and vanilla essence, etc. mixing the kneaded mass again in a dough mixer for about 5-10 minutes, lowering the ,temperature of the mixed dough in a refrigerator for about an hour rolling said dough on a bread - board to make a flattened mass of predetermined thickness cutting the flattened dough with of knife or suitable biscuit cutter to desired shape and size baking on greased tray in preheated hot air oven at 160�C for about 15-20 .minutes or till golden brown colour appears and finally cooling the baked product, sorting it in batches and packing the product in laminated pouches and storing at room temperature. The invention .also includes the baked protein rich biscuits.thus obtained.
