Tea is extracted into hot water and, after separation of the tea from 5 the tea-infused solution, refined sugar and yeast are added such that the beverage is carbonated by the fermentation process. This process results in a carbonated tea based alcoholic beverage having the appealing mouth feel of traditionally brewed beer but with a unique tea flavour profile, a low calorific content and substantially no gluten content. 10coo 040
