The invented food mixture contains a food in connection with a cation salt of pectin. The mixture, when suspended in distilled water, will swell to heat stable particles having a mean equivalent diameter greater than 100 micrometers. When preparing the invented food mixture the food is mixed with a dry cation salt of pectin, which, when suspended in distilled water, will swell to heat stable particles having a mean equivalent diameter greater than 100 micrometers. Process for preparing the cation salt of pectin for the invented food mixture is characterized in that a starting pectin material is treated with a solution of a cation salt having concentration of at least 5mM/liter under non-shear conditions and at a pH value being at least 2, under formation of a reaction mixture containing large gel particles that are visible with the naked eye.
