PURPOSE: A functional meat stock of cold noodle dishes is provided which is capable for long term storage by inhibiting a microorganism growth and by protecting the meat stock from deterioration. CONSTITUTION: A functional meat stock of cold noodle dishes is characterized by comprising chitin, chitosan and oligosaccharides or derivatives thereof, wherein chitin, chitosan and derivatives thereof have astringency so the quantity to be added is adjusted. In particular, 0.0001 wt%-5 wt%, preferably, 0.01-0.5 wt.% of chitosan based on the total mixing amount is added to prevent astringent flavor and its molecular weight is preferably 1,000 to 1,000,000. The stock decreases valence of cholesterol and blood pressure and shows antifungal activity.
