PURPOSE: A method for analysing components in beancurd using the NIR system is provided to analyze the components of beancurd rapidly and exactly without causing the pollution of environments. CONSTITUTION: The method for analysing the components in beancurd using NIR system comprises the steps of: homogenizing the beancurd; determining reflectances(R) of the homogenized beancurd at a certain wave using NIR system comprising a monochromator; and determining the amounts of the solid components, crude proteins or ashes in beancurd by using a component calculating equation and the reflectances, wherein the reflectances for solid components, crude proteins and ashes are measured at 1724 and 2312nm, 1724 and 1344nm, and 1734, 1782, 1856 and 2004nm respectively and the equation for determining the amount of solid components is represented by the contents of solid components(%) = 17.836-578.239x{log"(1/R1724)}+176.993x {log(1/R2312)}.
