PURPOSE: A method for manufacturing calcium lactate is provided. Calcium lactate is manufactured by the microbial fermentation from molasses diluted solution or fruit and vegetable processing wastes. CONSTITUTION: pH of molasses diluted solution, which is diluted 3-10 times, or fruit and vegetable-processing wastes is adjusted to 6.5-7.0. 2% of Lactobacillus sp. based on medium is inoculated into pH-adjusted medium, and pH of medium is monitored. pH of medium is maintained for 12-24 hours by adding 3-5% of calcium carbonate into the medium when pH of medium is decreased by the fermentation of Lactobacillus sp. Calcium lactate is formed by the reaction of calcium carbonate and lactate which is produced by Lactobacillus sp. If the culture is completed, calcium lactate is obtained by removing microbial cells using centrifugation, the filtration using activate carbon column and the freeze-drying or spray-drying.
