PROBLEM TO BE SOLVED: To provide baked confectionery having both crispy texture and soft texture.
SOLUTION: The baked confectionery is produced by using a plastic oil-and-fat composition a. The amount of the formulated plastic oil-and-fat composition a formulated with the baked confectionery in the whole oil-and-fat ingredients is 20-80 mass%. The plastic oil-and-fat composition a includes: 0.1-50 mass% of the following oil-and-fat A 10-90 mass% of oil-and-fat B and &ge0.1 to <40 mass% of oil-and-fat C in the oily phase. The oil-and-fat A includes 20-60 mass% of 12-14C saturated fatty acids, and 40-80 mass% of 16-18C saturated fatty acids in the whole constituent fatty acids, and is obtained by transesterification. Oil-and-fat B has 20-60 mass% content of palmitic acid 0.5-6 mass% content of stearic acid and 30-60 mass% content of oleic acid in the whole constituent fatty acids and oil-and-fat C is a liquid oil.
