PROBLEM TO BE SOLVED: To provide a frozen liquid milk product capable of exhibiting similar quality to a liquid milk product which is not frozen but cooled, even when the liquid milk product is frozen and then thawed, without using a coolant which has large limitations in practical use, such as liquid nitrogen, and a manufacturing method therefor.SOLUTION: There is provided a manufacturing method of a frozen liquid milk product, having a sterilization process for heating a liquid milk product at a prescribed temperature for 2 sec. to 30 min. a filling process for filling the liquid milk product into a container after the sterilization process, degassing and encapsulating the same, and a cooling process for freezing the liquid milk product after the filling process, in which thickness of the liquid milk product encapsulated in the container is 1 to 35 mm and the product is frozen by cooling the same at -20°C to -50°C by using a freezer and decreasing temperature of an inside center without keeping at 0 to -5°C, and the frozen liquid milk product manufactured by the method.SELECTED DRAWING: Figure 1【課題】液体窒素など実務上使用することに大きな制限がある冷媒を使用しなくとも、一度液状乳製品を凍結し、その後に解凍したとしても、凍結することなく冷却されていた液状乳製品と同等の品質を示すことができる凍結液状乳製品、及びその製造方法の提供。【解決手段】液状乳製品が所定の温度で2秒~30分加熱される殺菌工程と、殺菌工程後に、液状乳製品が容器に充填されてから脱気されて封入される充填工程と、充填工程後に、液状乳製品が冷凍される冷却工程を備え、冷凍工程において、容器に封入された液状乳製品の厚みが1~35mmで、冷凍装置を用いて-20℃~-50℃で冷却されて内部中心の温度が0~-5℃で滞留することなく下降して凍結された凍結液状乳製品の製造方法、及び、該方法により製造された凍結液状乳製品。【選択図】図1
