PROBLEM TO BE SOLVED: To provide an application product formed by using a fermentation product using a natural fermentation system.SOLUTION: The invention is configured so that, a raw material is put into a container which can be plugged, then an opening is closed with a plug, then, a storage step including a low temperature storage step for storing the raw material for a prescribed period under a controlled prescribed low temperature condition, in a semi-closed system in a packed state, is performed, in the storage step, a specific bacterial flora is formed by using a natural fermentation system for causing natural fermentation using autogenous microbes adhered to the raw material and sugar derived from the raw material, then removal processing of contaminant is performed, for obtaining a fermentation product as a food product production base material (base material) which can be applied for production of various kinds of food products including the bacterial flora, in which saprophyte is not detected (ten thousand pieces or less/g) in a non-heating state, thereby providing an application product of the above mentioned fermentation product.EFFECT: As an effect, a fermentation product which is useful as a food product production base material (base material) can be produced and an application product of the fermentation product formed by using the fermentation product can be provided.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2019,JPO&INPIT【課題】自然発酵システムを利用した発酵製品を使用して成るその応用製品を提供する。【解決手段】施栓可能な容器に原料を入れ、栓で開口部を塞いだ後、これを、容器詰めの状態の準密閉系で、制御された所定の低温度条件下に所定の期間保存する低温保存工程を含む保存工程で、原料に付着している自生微生物と原料由来糖分を利用して自然発酵させる自然発酵システムを利用して特定の菌叢を形成させ、これに夾雑物の除去処理を施して得られる、非加熱で雑菌が不検出(1万個以下/g)の、該菌叢を含む各種食品の生産に適用できる当該食品生産用基材(ベース素材)としての発酵製品を使用して成る当該発酵製品の応用製品。【効果】食品生産用基材(ベース素材;生もと)として有用な発酵製品を製造すること及び該発酵製品を使用して成る当該発酵製品の応用製品を提供することを実現可能とする。【選択図】図1
