PURPOSE: A method for manufacturing vinegar using Cudrania tricuspidata is provided to easily and effectively obtain Cudrania tricuspidata vinegar which has antioxidative and anticancer effects and is able to prevent and treat diabetes and hypertension. CONSTITUTION: A method for manufacturing vinegar using Cudrania tricuspidata comprises: a step of washing Cudrania tricuspidata； a step of pulverizing the washed Cudrania tricuspidata； a step of adding sulfurous acid and hydrolyzing with purified water； a step of boiling in a water bath and extracting； a step of adding a dried persimmon slurry or powder to the extract and adjusting sweetness with honey； a step of adding tartaric acid and adding yeast； a step of intermittently stirring and fermenting； a step of adding purified water and preparing to contain 6-7% alcohol； a step of adding a vinegar starter and fermenting under an anaerobic condition； a step of adding 0.01-2.0% of pegmatite and filtering； and a step of sterilizing and maturing for 3 months to 1 year.본 발명은 식초의 제조 방법에 관한 것으로, 보다 구체적으로는 꾸지뽕을 이용한 식초의 제조 방법에 관한 것이다. 본 발명에 따르면, 항산화, 항암 효과, 및 당뇨병, 고혈압 등의 질병 예방 및 치료의 효능을 가지는 꾸지뽕 식초를 용이하고, 효과적으로 제조하도록 할 수 있다. 따라서, 건강에 대한 관심이 높아지고 있는 현대에 기타의 화학물질을 첨가하지 않아 안전하고, 섭취가 용이하며, 항산화, 항암 효과 및, 당뇨병, 고혈압 등의 질병의 예방 및 치료의 효능을 가지는 건강기능성 식품으로서의 이용이 기대된다.
