A method of producing a directly gelling collagen gel from a liquid concentrated collagen solution and a liquid buffer solution, comprising the following steps: - obtaining a collagen solution and a buffer solution separately from each other, - temperature control of a collagen solution and a buffer solution at a temperature of from 20ºC to 37ºC, - mixing a thermostatically controlled collagen solution and a thermostatic buffer solution, whereby a gelatinous collagen composition is formed which can directly o gel. 2. The method according to claim 1, wherein the collagen solution has a concentration above 8 mg / ml. The method according to claim 2, wherein the pH of the collagen solution (calculated at 21ºC) is 6 or less. The method according to one of the preceding paragraphs, wherein the buffer solution is a neutralizing buffer solution. The method according to claim 1, wherein the collagen solution and the buffer solution are mixed in a ratio of from 1: 1 to 9: 1.6. A method according to claim 1, wherein the resulting collagen composition has a collagen concentration of 6 mg / ml or more.
