PROBLEM TO BE SOLVED: To acquire liquid seasoning of which onion and garlic flavor is amply reinforced, even if using dried onion without using unique material and using general raw material for liquid seasoning.SOLUTION: Seasoning liquid containing dried onion is heated up to 80°C or above so that ingredient of onion is eluded into it. Then, the seasoning liquid is cooled down to 70°C or below, garlic or died garlic which is dried at 100°C or below is added and reheated up to 70°C or above, and liquid seasoning of which onion and garlic flavor is reinforced is obtained.COPYRIGHT: (C)2011,JPO&INPIT【課題】特殊な原料を使用せず、一般的な液体調味料に使用される原料のみで、乾燥タマネギを使用していながら、タマネギとニンニクの香味が十分に増強された液体調味料を得る。【解決手段】乾燥タマネギを含む調味液を80℃以上に加熱して、タマネギの成分を調味液中に溶出させた後、70℃以下に冷却してから、ニンニク、または、100℃以下の温度で乾燥した乾燥ニンニクを添加して再度70℃以上に加熱してタマネギとニンニクの香味が増強された液体調味料を得る。【選択図】図1
