The present invention relates to a method for preparing a natural neutral flavor, and more particularly to a method of preparing a natural neutral flavor using an inosine-5-monophosphate (IMP) fermented broth or a glutamic acid fermented broth prepared by a two-step fermentation process comprising a first fermentation step for fungal fermentation and a second fermentation step for bacterial fermentation, a natural neutral flavor prepared by the method, and a food composition comprising the natural neutral flavor. The natural neutral flavors prepared according to the method of the invention are prepared using natural raw materials, and thus are harmless and safe for use in the human body, and may be added to food to produce clean and mild tastes, and improve the flavor of the food.La présente invention concerne un procédé de préparation dun arôme naturel neutre, et plus particulièrement un procédé de préparation dun arôme naturel neutre au moyen dun bouillon fermenté dinosine-5-monophosphate (IMP) ou dun bouillon fermenté dacide glutamique préparé par un processus de fermentation à deux étapes comprenant une première étape de fermentation pour fermentation fongique et une deuxième étape de fermentation pour fermentation bactérienne, un arôme naturel neutre préparé par le procédé, et une composition alimentaire comprenant larôme naturel neutre. Les arômes naturels neutres préparés selon le procédé de linvention sont préparés en utilisant des matières premières naturelles, et sont donc sans danger et sûrs pour utilisation dans le corps humain, et peuvent être ajoutés à des aliments pour produire des goûts purs et légers et améliorer larôme des aliments.
