Tamarind kernel powder (TKP), a Xyloglucan enriched seed is an under-utilized flour apart from its high galactoxyloglucan content has good nutritional properties in terms of protein, carbohydrate, micronutrients including antioxidants. The present invention relates to a method of preparation of edible films involving extrusion processing and casting technique from Xyloglucan enriched seed i.e Tamarind kernel powder (TKP). The invention discloses a thin edible film with antioxidative properties which in turn helped in improving the oxidative stability of the films and the films showed particles within range of 100nm and execute higher thermal stability. The film can be used in various applications like packaging material in food industry as well as in pharmaceuticals, as they are made with starch, has an isotropic, starchy odor tasteless, non-toxic and biodegradable polymer and also they have low oxygen permeability and antimicrobial property. All these characteristics made it a very important resource for development of polymer based film. Extrusion technology was employed as a pre-treatment processing step prior to film casting in the present study. The characterization of the edible film showed improvement in morphological, thermal and tensile elongation in extruded TKP based film wherein other nutritional and microbial properties of the film remained unaffected over a longer period of storage time.
