The invention relates to an edible coating for preserving pieces of fruit, to the production method and to the application thereof, the edible coating consisting of an aqueous solution which is applied to the pieces of fruit, covering same, where the aqueous solution comprises a polysaccharide base of carboxymethyl cellulose, a source of calcium, an antioxidant agent and additionally an antimicrobial agent, and where the carboxymethyl cellulose has a viscosity higher than 1.500 mPa.s and a low concentration, of between 0.025 and 1 wt. %, in relation to the total weight of the components of the aqueous solution.
